Garlic Butter Lemon Chicken

Let me tell you guys about this chicken!! When I tell you that this will literally melt in your mouth, I am not exaggerating one bit. Not only is it healthy but the flavor is all there as well. This recipe is super easy and you most likely have everything for it, already in your pantry! Here are some pictures and instructions below to walk you through the process…

I used three large, thick chicken breasts.
I then butterflied them so they would cook faster and more evenly.
Now comes the seasoning. I don’t usually measure when it comes to seasoning. I used dashes of the following products: pepper, seasoned salt, lemon pepper, parsley flakes.
Then I let the chicken rest and spoon out four tablespoons of Smart Balance butter and about 1 1/2 tablespoons minced garlic onto skillet. Cooked on medium low heat.
While the garlic cooked, I preheated the oven to 425 degrees Fahrenheit.
I then added the chicken to the bottom of a lightly greased, 13×9 glass pan and poured the butter-garlic mixture over the chicken.
Cooked the chicken in the oven for 25 minutes.
Finished product! My mouth is watering, guys!
I served the chicken with some broccoli that I cooked with butter, salt, pepper, garlic powder, until tender.

This meal is my go-to low carb meal. I also truly believe that our kids are more likely to eat healthy if they see their parents doing it too. Rowyn always at least tries a new food and for that, I am thankful! She loves broccoli and sometimes is not a big fan of chicken, however she loves this chicken recipe and I have to imagine it’s because of the tender texture yummy, buttery flavor.
